Prefect Pudding Project!


Our Prefects had great fun making Shortbread for their Pudding Project. Watch the video below to bake along with them! Their recipe is:


• 180g plain flour

• 55g caster sugar

• 125g butter

• Grated zest of 1 lemon

• 300ml double cream

• 2 tbsp lemon curd

• Fruit of your choosing!


1. Wash your hands whilst singing happy birthday twice

2. Put on your best apron

3. Weigh out all of the ingredients

4. Cut out parchment paper and fit into a shallow, rectangle baking tray

5. Set oven to 190˚c

6. Put plain flour, caster sugar, lemon zest and butter into a food processor and whiz until combined

7. Place the short bread dough onto the prepared baking tray and press it down with your fingers into a rectangle shape

8. Prick the surface of the dough with a fork

9. Put it into the preheated oven for 15 mins, until it is a pale golden-brown colour

10. Take it out of the oven and leave aside to cool completely

11. Whip the double cream in a large bowl

12. Fold the lemon curd into the whipped cream

13. Spread the lemon cream onto the cooled shortbread
